The Hollar

Locals love The Hollar in the heart of Madrid. “This is a place to hang out, relax and enjoy good Southern food with elegance,” said Josh Novak, a Cordon Bleu graduate and owner-chef of The Hollar. Novak teams Southern-style cooking with New Mexico’s relaxed, friendly vibes.

Located at the southern end of Madrid’s main drag on Highway 14 (opposite The Mine Shaft Tavern), the restaurant is a laid-back space that consists of a single room that can serve approximately 28 diners and an outdoor seasonal patio that seats 20. Some sample menu items (subject to change) include fried green tomatoes coated with cornmeal crust and topped with lavender flavored béchamel sauce; fried pickles (unexpectedly delicious!); a lovely chopped tomato, olive, onion, lemon and feta cheese bruschetta; prosciutto cheeseburgers; crispy chicken breast in a cornmeal crust atop a bed of cheesy grits and braised pork tenderloin.

Home-baked breads and desserts from The Hollar’s own bakery round out the offerings.
